Ingredients:
- 4 cups thinly sliced potatoes
- 3 tablespoons butter
- 3 tablespoons flour
- 1 1/2 c. milk
- 1/2 teaspoon salt
- 1 tablespoon Mangia Cajun Dry Rub
- 2 -3 cloves garlic, finely chopped
- 3 green onions, chopped (separate the firmer white ends from the green tips)
- 1 cup grated cheese (I used a blend of parm, romano, and asiago)
- 1/2 grated cheese for the top
- paprika
Directions:
- In a small sauce pan, melt butter and add flour, mixing with a whisk
- Let sit for a minute til mixture has browned slightly add milk, mixing with a whisk
- Add salt, mangia, garlic, and the white ends of the green onions
- Cook sauce on low heat until bubbling, occasionally stirring with a whisk
- Add in cheese and stir until melted, remove from heat
- In a casserole dish or 9×9 cake pan, layer half of the potatoes and then cover with half of the cheese sauce.
- Layer second half of potatoes and cover with the remaining cheese sauce.
- Sprinkle the remaining grated cheese on top
- Top with a sprinkle of mangia and a sprinkle of paprika
- Bake uncovered at 350 degrees for 1 hour
- Eat it!
