A substantial snack whether you’re saddle’n up or settle’n in.
Cajun Cowboy Caviar
1 cup Black Beans
1 chopped tomato
1/2 cup Roasted corn
1/2 cup onion
1/2 bell pepper
1 Tbs Mangia.tv Sweet or Cajun Dry Rub
1 tsp Garlic powder
1/8 cup jalapeno peppers
1/8 cup cilantro
Juice of 1 whole Lime
Combine Black beans, tomatoes, corn, onion, bell pepper, Mangia Rub, Garlic powder and jalapeno peppers in a large bowl. Season with salt to taste. Add cilantro and lime juice and then toss. Refrigerate for a minimum of 15 minutes.
