If you think anything is better than bacon, get yourself checked for a case of the crazies!
Bacon Wrapped Pork Tenderloin
1 Pork tenderloin
1 Package of bacon (or pancetta)
8 Sage leaves
Mangia Cajun Dry Rub
Rub pork tenderloin with Mangia Dry Rub, be generous. Put sage leaves on top of the tenderloin.
Wrap the tenderloin and sage leaves with bacon.
Put into foil and bake or smoke at 225 for 1 1/2 hours.
Take out of the oven (or smoker) and foil, be sure to take care to save the grease.
Put on the grill to crisp the bacon. High direct heat for 90 sec. on each side.
Put a tsp of Mangia Cajun Dry Rub into the grease in a bowl and mix.
Drizzle the sauce onto the tenderloin, take a breath, and remember this moment… because you will never be the same again.
