Flank and Swelling with Grilled Green Peppers and Baby Bok Choi
There are 3 important steps when it comes to cooking perfect, tender flank steak: 1. Marinate 2. Sear 3. Slice against the grain.
Ingredients:
Flank and Swelling 11-1-13
1 flank steak
1 top sirloin steak
Olive oil
Balsamic dressing
Soy sauce
Mangia Cajun Dry Rub
4 green peppers, sliced
6 baby bok choi, halved
 
Directions:
Drizzle steaks with olive oil and balsamic dressing. Generously sprinkle Mangia Cajun Dry Rub on steaks. Set aside for 30 min.
Place steaks on hot grill. Turn twice to mark. Move to indirect heat to finish. Let stand 5-10 min. to set up.
Slice against the grain of the meat.
 
Place pepper slices in freezer bag. Add olive oil salt and pepper and shake well. Remove and place on hot grill skin side down. Char, then move to indirect heat to finish cooking.
Place halved bok choi in steamer and steam for 15 min. Drain water and drizzle with olive oil and soy sauce. Place on hot grill two min. a side.
Plate and enjoy!
