The best way to cook steak if the grill is out of the question.
Cajun Surf ‘n Turf
- Rib Eye steaks from a local butcher
- 1/2 lb shrimp, peeled and deveined
- Mangia Cajun Dry Rub or Shrimp Mojo Dry Rub
- dried mushroom powder
- olive oil
- coarse salt and freshly ground pepper
- herbs: rosemary, oregano, thyme and parsley
Put shrimp in a ziplock bag with some olive oil and Mangia Rub and parsley and let marinade in the fridge until steaks are done. You’ll be cooking shrimp last today.
Let steaks rest at room temperature for at least 30 minutes before cooking.
Brush steaks with olive oil, season generously with salt, pepper, rosemary, thyme and oregano. Then make it rain with Mangia Dry Rub and a little mushroom powder.
Preheat oven to 450F with your cast iron skillet inside.
Take out cast iron skillet and put on the stove with medium heat. Sear steaks 2 minutes per side. Back in the oven for 5-6 minutes.
Out of the oven and on low-heat burner. Add 2-3 tbsp butter, tilt the skillet and continuously coat steaks with melted butter for 2 minutes.
Transfer steaks to cutting board, cover with plastic wrap tightly and let rest at least 10 minutes.
While steak is resting cook the shrimp in same cast iron skillet on medium, about 3 min per side.
Serve with butter and some greens.
